Cuddles - It happens because you smoked for years and years. It happens because you actually remodled your body to function with nicotine and 4000 or so other checmicals present in your blood stream. It happens because you finally got smart and your body is changing back to that of a non smoker. It took years to get your body to the point it was at with cigarettes. It will take time to go back as well. It's not an overnight process, it's a process that takes years. Don't worry about why it happens, just roll with it and ahrug it off. What other choice do you have? You can deal with it, you have again and again, just do it one more time and stay happy.
