I went through something similar. I think when we smoked our bodies produced more mucous in the lungs, throat, and sinuses to shield itself from the smoke. When we removed the irritant by quitting, the mucous production suddenly dropped and we end up drier than normal, hence the scratch feeling.
Personally, I felt like I was on the verge of a sinus infection that never actually happened. This took a couple of months to clear up. But everybody is different, so you may take more or less time.
Impatience is quite normal during this recovery process because quitting seems to distort time so badly (i.e. the first week lasts six months). You're doing great, Phillip. Keep it up. :)
