Your oatmeal with apples and brown sugar sounds delicious.  I have been thinking about it for two days now.  I guess I am just going to have to treat myself to a bowl full tomorrow morning...or maybe tonight even!
After that I am going to try making your rice dish it sounds interesting too.  I like making dishes that last a few days...

I have all those ingredients. Can I use Boca burgers?
And I love carrots and onion that way.

This is a simple little recipe that I like to make.
 
Vegetable Stew:
 
1 small pack of carrots peeled and cut into bite size pieces.
1 small bunch or celery cut up in bite size pieces.
1 or 2 red onions peeled and quartered.
2 to 4  rose potatoes with skin left on and cut into bite size pieces.
Take 3 or 4 frozen hamburger patties sprinkle with garlic salt or garlic pepper and cook until well done in a skillet then cut into bite size pieces.
 
Place all these ingredients in to a pot in the order listed, cover with just enough water to cover vegetables,add salt and pepper to taste and 2 chicken or beef bouillon cubes or a packet of dried onion soup mix if you are not watching your salt in take and put a lid on the pot. Bring to a gentle boil then lower heat to simmer but not boiling and cook for 30 to 45 minutes or until carrots are done.  
 
You can store the leftovers in the refrigerator and have something healthy and to ready to eat for several days.....

I like food. I like it a little too much.

Because I have to keep my weight down to keep the pressure off my knees I have to limit my intake. So if I'm going to do that then Kraft dinner just doesn't do it for me.  I like to put an apple in my oatmeal, and I like the large old fashioned flakes. A half cup of flakes with a cup of water, the cut up apple and a level table spoon of brown sugar. Micro wave at six for around ten minutes. longer if you are going to add milk. I like a pinch of nutmeg also.

For supper I have a rice dish. 

One and a half cups of brown basmati rice cooked in about three and a quarter cups water.
Salt if you want it.
Two pounds real or vegetarian burger. Drained if it is real.
One pound of bacon cooked bite size and crisp. Skip if you are vegetarian. You could use carrot coins. (thin slices of carrots)
Three or four good size onions chopped and fried. And as much garlic as you like.
One cup heated but not cooked peas.
One table spoon honey. Yes honey!  Cayenne pepper to taste.

Actually the cats get some of the hamburger so it is a little less.
I get some of the bacon so it is a little less.
If you don't have honey or want it then use soya sauce.

This freezes well if you are single.

I used to be the cook at a budhist monestary in upstate NY.The teacher would do his teachings and initiations on reaching enlightenment above the kitchen and the smells would permeate the air and everyone just wanted to get the lesson overwith so they could eat.  He had to do a lesson about pleasures getting the better of us.  I told them I would write a cookbook and name it - The Way To Enlightenment is Thru the Buddha's Belly.  Then 9/11 happened and my world changed.
 
So, after that introduction, I would love to hear about your favorite recipe(s). I'm in need of some excellent tofu recipes now that I no longer desire flesh.  Weaned myself down and now need to go cold turkey!  I made one the other night that turned out fantastic, but I don't want to get sick of the same flavors. Doesn't have to be American, I love it all, except very spicy.  There are so many different spices, when I walk down the isle in the natural grocer and smell the cardimon blending with the others, it is heaven on earth!
And your favorite bread recipes - love the sunflower seed one.
