I'm glad that I read this site. Last year at this time, I was dieting to lose the weight gained when I quit smoking. When hubby came back (from working out west) I loosened up on the diet abit and was trying to remember what I ate. I remember LOTS of spinach (salads and cooked) - Going out tomorrow to buy some! DL - Thanks, but not really - I wish I could take the credit for it! I was quoting from a web site i've recently been reading a LOT from. I like it lot because it's real information about foods - and not just about their vitamins either. It talks about their enzymes and enzymes that their presense tells our body to make and what health bennefits those have. He also always sites the studies the information comes from, so to the best of everyone'e knowledge, it's not just junk science. It's been great for me becuase it's helped me to change my relationship with food quite a bit. you know? I now eat to nourish my body - get rid of toxins, carcinogens, and cholesterol. I fead my imune system, and my arteries and my heart! That's MUCH better than feading my latest bout with depression! LOL Aloha - I also read that Ginger actually kills ovarian and uterin cancer cells. He says it's good to include some fresh ginger in your recipes all the time because those cancers usually go undetected until it's too late. Us being ex-smokers, we're at a higher risk for those. I have a great recipe for curried chicken soup that has fresh ginger, and that nummy crucifer - couliflower in it! Oh! And I just read last night that black pepper helps to stop GAS! Thanks Misty..I tend to swing back and forth between spinach and brocolli. Don't have to worry about prostrate, but do need to get more of these toxins out, so I'll concentrate on some of those more. Quitter Critter Stew!? I like it! Aloha - Spinach isn't a part of that particular family of vegies: "Spinach belongs to the same family (Chenopodiaceae) as chard and beets. It shares a similar taste profile with these two other vegetables-it has the bitterness of beet greens and the slightly salty flavor of chard." But - it's still very very good anti-cancer agent: "Researchers have identified at least 13 different flavonoid compounds in spinach that function as antioxidants and as anti-cancer agents. (Many of these substances fall into a technical category of flavonoids known as methylenedioxyflavonol glucuronides.) The anticancer properties of these spinach flavonoids have been sufficiently impressive to prompt researchers to create specialized spinach extracts that could be used in controlled studies. These spinach extracts have been shown to slow down cell division in stomach cancer cells (gastric adenocarcinomas), and in studies on laboratory animals, to reduce skin cancers (skin papillomas). A study on adult women living in New England in the late 1980s also showed intake of spinach to be inversely related to incidence of breast cancer. A carotenoid found in spinach and other green leafy vegetables fights human prostate cancer two different ways, according to research published in the the Journal of Nutrition. The carotenoid, called neoxanthin, not only induces prostate cancer cells to self-destruct, but is converted in the intestines into additional compounds, called neochromes, which put prostate cancer cells into a state of stasis, thus preventing their replication."
