Oh man, I hear you Jaz. I did have to look up Celiacs Disease and Gluten but, we're close to being in the same boat. You CAN stick to the diet too. You have no choice.
With me, I'm diabetic so ALL carbs are all but gone. Protein is my friend but anything made out of flour, cornmeal, and even wheat shoots my glucose level through the roof. The lighter colored that veggies are, i.e. corn, sweet peas, potatoes,lima beans, the worse they are for me. I have to just stay away from those but I can have all of the lean meat and all of the other veggies. I do have to keep my carb amount to 7 to 10 grams per meal, depending on how active I am. I can't eliminate them completely or my blood sugar will go too low. I have that diet to stick to for the rest of my life too so I know you can do it. It's a sorry hand but we have to play it out.
I read that folks with Celiacs Disease are often lactose intolerant too. Is that true in your case?
Hun, you can stick to the diet and just know, you're going to lose some weight from that diet. Once you have to cut those carbs way down, it happens. Now carbs are your long lasting energy so what will you be eating to sustain your energy. Protein, like in meat, is fast acting energy and burns off so fast.
Oh yes, and I was your bread, potatoes, corn, and gravy with biscuits kind of gal all of my life. Phfft!!!
